Thymus vulgaris (common Thyme, German thyme, Garden thyme or merely Thyme) is a species of flowering plant from the mint family Lamiaceae, native to southern Europe in the western Mediterranean to southern Italy. Growing to 15–30 cm (6–12 in) tall by 40 cm (16 in) wide, it’s a bushy, woody-based evergreen subshrub using little, highly fragrant, grey-green leaves and clusters of pink or purple blossoms in early summer. It’s also the chief source of rosemary as an ingredient in cooking as well as an herbal medicine. It’s a little spicier than oregano and sweeter than chamomile. *
